It truly has become a beloved family favorite that keeps everyone coming back for second helpings.
Ingredients 🧾
2 – 8 oz tubes of crescent rolls 2 cups cooked, shredded chicken 🐔 12 oz bag frozen mixed vegetables, thawed 🥕 2 cups frozen Hashbrowns O’Brien, thawed 🥔 1 cup chicken broth 26 oz can of cream of chicken condensed soup ½ tsp garlic powder ½ tsp black pepper ¼ tsp salt
Method 👩🍳
- Preheat your oven to 350°F 🔥 and grease a 9×13-inch casserole dish thoroughly to prevent sticking.
- Unroll one tube of crescent rolls and lay it flat across the bottom of the greased dish. Firmly press all the dough seams together to create a solid pastry crust, then blind bake for 15 minutes until lightly golden.
- Grab a large mixing bowl, and combine the shredded chicken, thawed mixed vegetables, hashbrowns, chicken broth, cream of chicken soup, garlic, salt and pepper. Stir everything well until all ingredients are evenly coated in the creamy sauce.
- Pour the thick chicken filling mixture over the pre-baked crescent base, then use a spatula to spread it out into a smooth, even layer.
- Unroll the second tube of crescent rolls and lay the sheet on top of the filling. Pinch all open seams closed to seal the casserole. Cut 4 small slits through the top pastry layer to let steam escape while baking.
- Place the dish back into the oven and bake for another 20 minutes, until the top crescent crust turns beautifully golden brown. Once finished baking, remove from the oven and let it rest for 5 minutes. This short rest helps the filling set up, so you can cut clean slices before serving 😋.
Important Recipe Notes 💡
• Make sure your frozen vegetables and hashbrowns are fully thawed before mixing to ensure even cooking and avoid watery filling. • Use cooked chicken: Rotisserie chicken or leftover roasted chicken works perfectly and saves lots of prep time. • Don’t overbake the bottom crescent crust! It should be lightly golden before adding the filling so it doesn’t turn tough and hard. • Taste the filling before baking and adjust salt or pepper if needed to match your flavor preference. • Allow the casserole to sit for 5 minutes after baking; this helps it set and makes cutting neat servings much easier. • You can assemble the casserole a few hours in advance and refrigerate it until you are ready to bake.
